DEEP JAPAN

There is an Italian restaurant near my house run by one chef, who is about the same generation as me. The pasta here is my favorite.

Of course, the pasta here is by no means microwave-cooked. As you probably know, there are a lot of foods in Japan that can be cooked in a microwave. If you come to Japan, please check it out at a convenience store or supermarket. In addition to pasta, we also have fried noodles, pilaf, fried rice, ramen, and even frozen bento boxes. These are relatively well-made products, but I don't really like them.

Well, the owner of the Italian restaurant is very particular about his cooking. It's even moving.

One day, I visited this restaurant with my wife. Then we ordered “Karasumi Peperoncino.''

Do you know Karasumi? If you are Taiwanese, you probably know Karasumi. This is salted and dried roe from a fish called mullet. This is very tasty and expensive.

The owner of this restaurant actually made the mullet roe himself to make the “Karasumi peperoncino.'' So he got an egg from a mullet somewhere, salted it, then dried it, and made mullet roe. After weeks of preparation, on the day I visited the restaurant, he used the mullet roe to make pasta.

amazing!

What's more, he doesn't charge a high price for the pasta dishes he takes so much time and effort to make. The price is such that anyone in Japan can easily eat it.

This chef is a person I respect and love.

I’m not sure if you have an interest in this kind of story. I was born in 1964 and Japan was a country like North Korea or Russia about 20 years ago before I was born.

Japan was invading Korea, China, Taiwan, the Philippines, Indonesia, the Malay peninsula and so on back then. All of those activities of this nation were wrong, in many senses.

However, my grandparents and parents didn’t know that Japan was invading those countries during the war. They were educated that Japan was fighting for the people in those countries. Everything was fake from the government.

Japan was defeated by the US, and many Japanese had to die in the war. However, I think, Japanese has noticed what is the correct way for ourselves, at that time. Therefore, Japan could have come to walk in a peaceful way after that, I can say. Peace is precious more than everything.

Even in any country, the government doesn't necessarily say the truth and the facts. So everybody needs to make an effort to know what the facts are. I think you need to know what the facts around you are, to live in peace.

You should distinguish between fake news and not, about the information you got. Always.

My poor nephew

He is currently working in this city,

and he was a very energetic baseball player

but he looks a little depressed now.

I hope he doesn't fall into mental illness

I'm praying.

I've never lived in Tokyo.

But I think I know the gist of it.

Many of the people working in Tokyo

spend 4 hours every day

for going to work.

And on a crowded train.

I would go crazy in a week there.

There are too many people everywhere you go.

So, speaking of "nature" in Tokyo,

It's about a group of humans.

I'm not talking about forests, forests, or rivers.

A group of humans is "nature"

What a stuffy town.

People are working everywhere 24 hours a day.

Are active.

There are people in this city

who work every day without sleeping.

You won't believe it

This is true.

There is no way a person who works without sleep can think straight.

No, humans don't have to think.

Because in this town, humans are just parts of society.

The town called Tokyo

It's one big computer system.

Of course, many foreign tourists

The fact that they like coming to Tokyo is that

I know too.

since they look like they've wanted to see something scary

They are coming to Tokyo.

They are in the extraordinary space of Tokyo.

Maybe they want to go crazy.

But if I confess honestly

When I was in my 20s, I really wanted to go to Tokyo.

Even in my 30s, I couldn't help but want to go to Tokyo.

That's because I wanted to try something big.

My nephew is currently working in Tokyo.

Probably for the same reason.

Tokyo is such a city.

Absorb the energy of young people

It's a city that's always growing.
